Ingredients
  

  • 1 loaf of French bread about 12-14 ounces, preferably day-old
  • 4 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 medium apples Granny Smith or Honeycrisp, peeled and sliced
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter melted (for apples)

For the Streusel Topping:

  • ½ cup all-purpose flour
  • ½ cup brown sugar packed
  • 1 teaspoon cinnamon
  • ¼ cup unsalted butter cold and cubed
  • Optional: ¼ cup chopped walnuts or pecans

Instructions
 

Step 1: Prepare the Bread

  • Cut the French bread into 1-inch cubes. If it’s fresh, let it sit out for a few hours to dry. This helps it absorb the custard better.

Step 2: Cook the Apples

  • Melt 2 tablespoons butter in a skillet over medium heat. Add sliced apples, 1 teaspoon cinnamon, and a pinch of sugar. Cook for 5-7 minutes until soft, then set aside.

Step 3: Make the Custard

  • In a large bowl, whisk eggs, milk, cream, and sugar together. Add vanilla, cinnamon, nutmeg, and salt. Mix until smooth and combined.

Step 4: Assemble the Base

  • Spread half the bread cubes in the greased baking dish. Layer the cooked apples evenly over the bread. Top with the remaining bread cubes.

Step 5: Pour the Custard

  • Pour the custard mixture over the bread and apples. Press down gently to ensure everything is soaked. Cover and refrigerate for at least 2 hours, or overnight.

Step 6: Make the Streusel

  • In a small bowl, mix flour, brown sugar, and cinnamon. Cut in cold butter with a fork until crumbly. Stir in nuts if using, then chill until ready.

Step 7: Preheat and Top

  • Preheat your oven to 350°F (175°C). Remove the casserole from the fridge. Sprinkle the streusel evenly over the top.

Step 8: Bake It

  • Bake uncovered for 45-50 minutes until golden and set. The streusel should be crisp and the center firm. Let it cool for 5-10 minutes before serving.

Notes

Opt for day-old bread to soak up the custard without getting mushy. Chill it overnight for deeper flavor and easier mornings. Keep the streusel butter cold for the best crumble, and don’t overbake to maintain a soft center.
