Ingredients
  

  • 8 slices of bacon
  • 6 large eggs
  • ¼ cup milk
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas 10-inch size
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions
 

Step 1: Cook the Bacon

  • Place bacon slices in a skillet over medium heat. Cook until crispy, about 6-8 minutes, flipping once. Drain on paper towels and set aside.

Step 2: Whisk the Eggs

  • In a bowl, whisk eggs with milk, salt, and pepper. The milk keeps the eggs fluffy. Set this mixture aside for now.

Step 3: Scramble the Eggs

  • Melt butter in the skillet over medium-low heat. Pour in the egg mixture and stir gently. Cook until just set, about 3-4 minutes.

Step 4: Add the Cheese

  • Sprinkle shredded cheddar over the eggs. Let it melt for 1-2 minutes. Stir lightly to mix it in.

Step 5: Warm the Tortillas

  • Heat tortillas in the microwave for 20 seconds. Or warm them in the skillet for 10 seconds per side. This makes them soft and pliable.

Step 6: Assemble the Burritos

  • Lay a tortilla flat and add two bacon slices. Spoon a quarter of the egg-cheese mix on top. Keep it centered for easy rolling.

Step 7: Roll It Up

  • Fold the bottom of the tortilla over the filling. Tuck in the sides and roll tightly to close. Repeat for all four burritos.

Step 8: Toast (Optional)

  • Place burritos seam-side down in the skillet. Cook for 1-2 minutes per side until golden. This adds a nice crunch.

Step 9: Serve Hot

  • Cut in half if you like, and serve immediately. Add salsa or hot sauce on the side if desired.

Notes

Cook eggs on medium-low to keep them soft and avoid a rubbery texture. Warm tortillas right before rolling to prevent cracks. For freezing, wrap each burrito tightly to maintain freshness.
