Ingredients
  

For the Sushi Roll Base:

  • 2 cups sushi rice
  • 3 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 4 sheets of nori seaweed

For the Baked Lobster Topping:

  • 1 pound lobster meat fresh or frozen, cooked
  • 3 tbsp Japanese mayonnaise Kewpie recommended
  • 1 tbsp sriracha sauce
  • 1 tsp soy sauce
  • 1/2 tsp garlic powder
  • 1/4 cup shredded mozzarella optional, for a cheesy twist

For Garnish:

  • 1 avocado sliced thinly
  • 1 cucumber julienned
  • 1 green onion sliced thinly
  • Sesame seeds
  • Eel sauce or spicy mayo for drizzling

Instructions
 

Step 1: Prepare the Sushi Rice

  • Start by washing the sushi rice under cold water until the water is clear. This removes extra starch and helps the rice cook properly. Cook the rice in a rice cooker or pot, following the instructions on the package.
  • When it’s done, put the rice in a big bowl and let it cool a little. Mix rice vinegar, sugar, and salt together, then gently stir it into the rice. Cover the bowl with a damp cloth to keep the rice fresh and soft while you get the other ingredients ready.

Step 2: Cook the Lobster

  • Preheat your oven. Remove the lobster meat from the shell and cut it into small pieces. Put the lobster in a baking dish, drizzle with butter or olive oil, and bake for 8-10 minutes until tender. Let it cool a bit before handling.

Step 3: Prepare the Roll Ingredients

  • Get your ingredients ready—like cucumber sticks, avocado slices, and any toppings or sauces you like. Cut everything into thin, even slices for easy rolling. Set up a clean surface and cover your sushi mat with plastic wrap to avoid sticking.

Step 4: Assemble the Sushi Rolls

  • Place a sheet of nori on a sushi mat, shiny side down. Spread a thin layer of sushi rice on top, leaving an inch of space at the top. Add lobster, cucumber, and avocado in a line across the rice. Use the mat to roll it up tightly, pressing gently to keep it together.

Step 5: Bake the Rolls

  • Put the finished rolls in a baking dish and add your favorite topping, like spicy mayo or a cheese layer, on top of each roll. Bake them in the oven for about 5-7 minutes, until the topping is golden and bubbly. Take them out of the oven and let them cool for a few minutes before cutting.

Step 6: Slice and Serve

  • After baking use a sharp knife to cut each roll into equal pieces and clean the blade after each cut to keep the edges tidy. Place the sliced rolls on a plate and add extra toppings like sesame seeds, chopped green onions, or a bit of eel sauce.
