Equipment

  • Heavy-bottomed Saucepan
  • Candy Thermometer
  • Baking Sheet
  • Parchment paper
  • Wooden Spoon or Silicone Spatula

Ingredients

  • Peanuts: 2 cups of roasted unsalted peanuts.
  • Maple Syrup: 1/2 cup of pure maple syrup.
  • Granulated Sugar: 1 1/2 cups of granulated sugar for sweetness and thickness.
  • Cream Cheese: 4 ounces of softened cream cheese.
  • Butter: 1/4 cup of unsalted melted butter.
  • Vanilla Extract: 1 teaspoon of pure vanilla extract.
  • Salt: A pinch of salt.

Instructions

Step 1: Prepare the Ingredients

  • First, make sure all your ingredients are measured and ready for use. This includes roasting your peanuts if they aren't already and setting your cream cheese out to soften. Having everything ready will make the process much smoother and quicker.

Step 2: Melt Butter and Sugar

  • Place your heavy-bottomed saucepan over medium heat. Combine the melted butter and granulated sugar in the pan. Stir until the sugar is dissolved and the mixture is smooth.

Step 3: Add Maple Syrup and Cream Cheese

  • Lower the heat slightly, then carefully add the maple syrup and softened cream cheese into the saucepan. Mix continuously until everything is well mixed and the cream cheese is fully melted and forms a rich, creamy sauce.

Step 4: Heat to the Right Temperature

  • Attach your candy thermometer to the saucepan. Keep cooking the mixture, stirring now and then, until it hits 245°F. This is the important point where the candy starts to thicken properly. If you don’t have a thermometer, you can drop a bit into cold water to check. It should make a hard ball.

Step 5: Incorporate Peanuts and Vanilla

  • Once the mixture reaches the desired temperature, remove the saucepan from heat and quickly stir in the vanilla extract and roasted peanuts. Make sure the peanuts are thoroughly coated with the candy mixture.

Step 6: Set the Candy

  • Line your baking sheet with parchment paper. Spread the peanut mixture evenly across the sheet. Let it cool at room temperature until the candy hardens. This usually takes about 1 to 2 hours. Afterward, break the candy into bite-sized pieces.

Step 7: Store and Enjoy

  • Once your Maple Nut Goodies have cooled and set, store them in an airtight container. They will remain fresh and delicious for up to 2 weeks. Now, you can taste a piece of nostalgia with each bite of your homemade Brach's Maple Nut Goodies.

Notes

While not necessary, storing the goodies in the refrigerator can extend their shelf life, especially in warmer climates. Ensure they are in a sealed container to prevent moisture absorption and flavor changes.
