Ingredients
  

  • 8 ounces of spaghetti or your favorite pasta
  • 2 tablespoons of unsalted butter
  • 4 cloves of garlic minced
  • 2 cups of chicken broth
  • 1 cup of heavy cream
  • 1 cup of freshly grated Parmesan cheese
  • 1/2 teaspoon of salt or more to taste
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of crushed red pepper flakes optional, for a hint of heat
  • Chopped parsley for garnish optional

Instructions
 

Step 1: Cook the Pasta

  • Boil a big pot of water. Add salt to the water to give the pasta more flavor. Once the water is boiling, add your pasta and cook it until it’s just firm (check the package for timing). Before draining the pasta, save about one cup of the water—it will help make the sauce creamy later.

Step 2: Cook the Garlic

  • While the pasta cooks, heat a large pan over medium heat. Add a little olive oil and a small piece of butter. When the butter melts, add finely chopped garlic. Stir the garlic and cook it until it smells good and turns light golden. Be careful not to burn it, as this can taste bitter.

Step 3: Make the Sauce

  • Turn the heat down a little and pour in chicken broth. Stir to mix in the tasty bits from the garlic. Slowly add heavy cream, stirring as you go. Let the cream simmer gently until it gets a little thicker and creamier.

Step 4: Add the Cheese

  • While the sauce is simmering, slowly add grated parmesan cheese. Stir constantly so the cheese melts into the sauce and becomes smooth. If the sauce feels too thick, add a little of the pasta water you saved to make it looser.

Step 5: Mix Everything Together

  • Once the pasta is drained, add it straight into the pan with the sauce. Toss it gently so all the pasta gets coated in the creamy garlic parmesan sauce. Let it cook in the sauce for another minute or two. Serve it on plates, and if you like, sprinkle some fresh parsley on top for color. Enjoy your tasty pasta!
