  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 4 tablespoons unsalted butter cold and cubed
  • 1/3 cup buttermilk
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract

Instructions
 

Step 1: Get the Blueberries Ready

  • Preheat your oven to 375°F (190°C). Wash and dry the blueberries, then put them in a 9-inch baking dish. Sprinkle the blueberries with some sugar, a little cinnamon, and the zest of one lemon. Gently mix everything so the blueberries are coated evenly. Set the dish aside while you make the topping.

Step 2: Make the Topping

  • In a bowl, mix flour, a pinch of salt, sugar, and baking powder. Add cold, cubed butter and use your fingers or a pastry cutter to mix until it looks like crumbs. Slowly add cold milk, stirring with a fork, until a soft dough forms. Don’t mix too much, or the texture may not be right.

Step 3: Put It Together

  • Spoon the dough on top of the blueberries in small dollops. It’s fine if some blueberries are still showing; the gaps will let steam escape and help the top turn golden brown.

Step 4: Bake the Cobbler

  • Put the dish in the oven and bake for 30 to 35 minutes, until the topping is golden brown and firm. The blueberry filling should be bubbling around the edges. Turn the dish halfway through baking to cook it evenly.

Step 5: Cool and Serve
