Ingredients
  

  • 1 lb ground beef choose lean for less grease
  • 5-6 medium russet potatoes peeled and cubed
  • 1 medium onion diced
  • 2 medium carrots diced
  • 3 celery stalks chopped
  • 4 cups chicken or beef broth
  • 1 cup heavy cream swap for whole milk if you prefer lighter
  • 2 tablespoons all-purpose flour for thickening
  • 1 clove garlic minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional toppings: Shredded cheese chopped parsley, bacon bits

Instructions
 

Step 1: Brown the Hamburger

  • Put a big soup pot or Dutch oven on medium heat. Add the ground beef and cook it completely, breaking it into small pieces as it browns. Make sure there’s no pink left! When it’s done, pour out any extra grease so your soup isn’t too oily. This step gives your soup a tasty base.

Step 2: Sauté the Vegetables

  • After removing the grease, add your chopped onions, carrots, and celery to the same pot. Cook them for about 5 minutes, stirring now and then so they don’t burn. The vegetables will soften and smell amazing. This mix adds great flavor to the soup.

Step 3: Add Potatoes and Broth

  • Add your diced potatoes to the pot with beef or chicken broth, whichever you like best. Stir it all together and bring it to a gentle boil. Then lower the heat, cover the pot, and let it cook slowly for about 20 minutes. This will make the potatoes soft and blend the flavors nicely.

Step 4: Create the Creamy Base

  • When the potatoes are soft, it's time to make your soup creamy. Add the milk and cream, and mix gently. Now, taste the soup and add salt, pepper, or your favorite spices if needed. If you want the soup to be thicker, mash some of the potatoes right in the pot.

Step 5: Simmer and Serve
