Ingredients

  • ½ teaspoon smoked paprika

  • 8 small flour tortillas 6-inch size
  • 1 cup shredded iceberg lettuce
  • ½ cup diced tomatoes
  • ½ cup shredded cheddar cheese

For the secret sauce:

  • ¼ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon white vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon sugar
  • Pinch of salt

Instructions
 

Step 1: Season the Chicken

  • In a small bowl, mix chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this spice mix all over the chicken thighs. Let it sit for 10 minutes to soak up the flavors.

Step 2: Cook the Chicken

  • Heat olive oil in a medium skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes per side. It’s done when the internal temp hits 165°F or juices run clear.

Step 3: Chop the Chicken

  • Move the cooked chicken to a cutting board and let it rest for 5 minutes. Chop it into small bite-sized pieces. This keeps it juicy and easy to eat.

Step 4: Make the Secret Sauce

  • In a small bowl, whisk together mayonnaise, ketchup, vinegar, garlic powder, sugar, and a pinch of salt. Stir until smooth and set aside. This sauce brings that Del Taco tang.

Step 5: Warm the Tortillas

  • Heat the tortillas in the skillet over medium heat for 20-30 seconds per side. Or wrap them in a damp paper towel and microwave for 30 seconds. Warm tortillas fold better and taste great.

  • Lay a tortilla flat and add a spoonful of chopped chicken down the center. Top with shredded lettuce, diced tomatoes, and a sprinkle of cheddar cheese. Drizzle with a teaspoon or two of secret sauce.

Step 7: Fold and Serve

  • Fold the tortilla over the filling, tucking one side under if you like a snug taco. Repeat with the rest and serve immediately. They’re best fresh off the assembly line!
