Equipment

Ingredients
  

For the Shrimp:

  • 1 pound large shrimp peeled and deveined
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup chicken broth or seafood stock
  • ½ cup sun-dried tomatoes chopped
  • 2 cups fresh spinach leaves

For the Pasta:

  • 12 ounces linguine or your favorite long pasta
  • Water for boiling
  • 1 teaspoon salt

Instructions
 

Step 1: Cook the Pasta

  • Boil salted water in a large pot. Cook the linguine following the package instructions until al dente. Save a cup of the pasta water, then drain and set the pasta aside.

Step 2: Cook the Shrimp

  • Heat olive oil in a pan over medium heat. Season the shrimp with salt, pepper, and paprika (optional). Cook for 2-3 minutes per side until pink and done. Remove and set aside.

Step 3: Make the Sauce

  • In the same pan, sauté minced garlic in olive oil for 30 seconds, then add sundried tomatoes and stir for another minute. Pour in heavy cream and let it simmer for 2-3 minutes.

Step 4: Add Parmesan and Spinach

  • Stir in grated Parmesan until it melts and thickens the sauce. Add spinach and let it wilt, stirring occasionally for 1-2 minutes.

Step 5: Mix Pasta with Sauce

  • Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, mix in some of the reserved pasta water until it’s just right.

Step 6: Add the Shrimp

  • Gently mix the shrimp back into the pan with the pasta and sauce. Heat everything together for 1-2 minutes. Adjust salt and pepper if needed.

Step 7: Serve

  • Serve the pasta on plates, sprinkle with extra Parmesan and parsley if you’d like, and enjoy!
