Ingredients
  

Dry Ingredients:

  • 2 cups of rolled oats make sure they’re gluten-free if needed
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • ¼ teaspoon of nutmeg
  • ¼ teaspoon of salt

Wet Ingredients:

  • 2 cups of freshly grated carrots 🥕
  • 1 cup of unsweetened applesauce
  • 2 large eggs room temperature
  • ½ cup of pure maple syrup
  • 2 teaspoons of vanilla extract

Add-ins (Optional but AMAZING):

  • ½ cup of chopped walnuts or pecans
  • ½ cup of raisins or shredded coconut
  • Cream cheese frosting optional but highly recommended for the ultimate carrot cake experience

Instructions
 

Step 1: Get Ready

  • Preheat your oven to 350°F (175°C). While it’s heating, line your cake pan with parchment paper to stop the cake from sticking. If you’re using a loaf pan, that works too. Grease the sides with a little oil or butter—this will make cleanup much easier later!

Step 2: Make Oat Flour

  • Put your oats in a blender or food processor and blend until they look like flour. This will help make your cake soft and fluffy without regular flour. Once done, pour the oat flour into a mixing bowl and set it aside.

Step 3: Mix Wet Ingredients

  • In a mixing bowl, combine eggs, honey (or your favorite sweetener), vanilla, and a bit of oil. Stir or whisk everything until it’s smooth. This is where the yummy flavor starts, so make sure it’s well mixed!

Step 4: Add Dry Ingredients

  • Now, add the dry ingredients. Sift in the oat flour, cinnamon, baking powder, and a pinch of salt. Stir gently until you see a thick batter. Don’t mix too much—this helps keep the cake soft. The cinnamon smell should already remind you of carrot cake!

Step 5: Add the Carrots

  • Pour the batter into your prepared pan and spread it out evenly. Bake in the preheated oven for 30-35 minutes.
