Ingredients
  

For the Dough:

  • 3 cups all-purpose flour
  • 1/2 cup unsalted butter cubed and cold
  • 2 large eggs
  • 1/3 cup sugar
  • 1/4 cup cold water
  • A pinch of salt

For the Filling:

  • 1 lb ricotta cheese
  • 1/2 lb mozzarella cheese shredded
  • 1/4 lb provolone cheese diced
  • 1/4 lb salami diced
  • 1/4 lb prosciutto diced
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley chopped (to taste)
  • Salt and pepper to taste

Instructions
 

Step 1: Make the Dough

  • Mix flour, butter, eggs, sugar, and a pinch of salt in a bowl until you get firm dough. Split it into two pieces—one bigger than the other. Wrap them in plastic and chill in the fridge for 30 minutes.

Step 2: Make the Filling

  • While the dough chills, mix ricotta, mozzarella, provolone, Parmesan, and cooked meats like salami, ham, and prosciutto in a bowl. Add eggs, black pepper, and a little nutmeg to make it creamy.

Step 3: Roll Out the Dough

  • Roll out the bigger dough piece on a floured surface. Place it in a 9-inch pie dish, making sure it covers the bottom and sides. Trim off any excess.

Step 4: Assemble the Pie

  • Add the filling to the crust, spreading it evenly. Roll out the smaller dough piece and place it on top. Pinch the edges to seal, and cut small slits on top to let steam out.

Step 5: Bake

  • Preheat your oven to 375°F (190°C). Brush the top crust with a whisked egg for a golden finish. Bake for 60-75 minutes, until the crust is golden and the filling is set. Cool for 15 minutes before slicing.

  • Cut into slices and serve warm, at room temperature, or cold. Perfect for any occasion!
