Ingredients
  

For the fish:

Instructions
 

Step 1: Prepare the Fish

  • Cut the fish into bite-sized strips, about 3-4 inches long. Season generously with salt and pepper, allowing the flavors to infuse.

Step 2: Set Up a Breading Station

  • Arrange three shallow dishes or plates. Fill one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, garlic powder, smoked paprika, cayenne pepper (if using), salt, and pepper.

Step 3: Bread the Fish

  • Dip each piece of fish in the flour, ensuring it is evenly coated. Next, dredge it in the egg mixture, and finally press it into the breadcrumb mixture for a golden, crunchy coating.

Step 4: Fry the Fish

  • Heat oil in a deep frying pan until it reaches 350°F (175°C). Fry the fish in batches to avoid overcrowding, cooking each piece for 3-4 minutes or until it’s golden and crispy. Remove and drain on paper towels.

Step 5: Prepare the Zesty Cilantro Lime Dressing

  • Combine Greek yogurt, mayonnaise, lime juice and zest, cilantro, minced garlic, salt, and pepper in a food processor or blender. Blend until smooth, adjusting seasoning to taste.

Step 6: Assemble the Tacos

  • Warm your tortillas, then layer them with shredded red cabbage, crispy fish, sliced avocado, diced tomatoes, and a drizzle—or dollop—of the cilantro lime dressing. For an extra touch of brightness, sprinkle with crumbled cotija cheese and serve with lime wedges.
