Equipment

  • Large saucepan or pot
  • Wooden spoon or spatula
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Blender or immersion blender (optional for smoother sauce)

Ingredients

  • 2 tablespoons of olive oil
  • 1 large onion finely chopped
  • 4 cloves of garlic minced
  • 1 can 28 ounces of crushed tomatoes
  • 2 tablespoons of tomato paste
  • 1 tablespoon of sugar
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of crushed red pepper flakes adjust to taste
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish optional

Instructions

Step 1: Prepare the Ingredients

  • Chop the Onion and Garlic: Finely chop one large onion and mince four cloves of garlic. Set them aside for later use.
  • Measure the Other Ingredients: Make sure to measure out all the other ingredients beforehand. This includes the 2 tablespoons of olive oil, 1 can of crushed tomatoes, 2 tablespoons of tomato paste, 1 tablespoon of sugar, 1 teaspoon each of dried basil and oregano, 1/2 teaspoon of crushed red pepper flakes, and salt and black pepper to taste.

Step 2: Start Cooking

  • In a large pot or saucepan, warm 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté until they are golden brown and fragrant, typically about 5-7 minutes.

Step 3: Build the Sauce

  • Start by adding the can of crushed tomatoes to the pot, stirring to combine them with the onions and garlic. Next, mix in 2 tablespoons of tomato paste, ensuring it is well incorporated.

Step 4: Season the Sauce

  • Add the herbs and spices by sprinkling in 1 tablespoon of sugar, 1 teaspoon each of dried basil and oregano, and 1/2 teaspoon of crushed red pepper flakes. Season with salt and black pepper to taste. Reduce the heat to low, cover the pot, and let the sauce simmer for about 30 minutes, stirring occasionally to ensure the flavors meld together beautifully.

Step 5: Final Touches

  • If you want a smoother sauce, use a hand blender to mix it until you like the texture. If you don't have a hand blender, you can carefully pour the sauce into a regular blender, blend it, and then put it back in the pot. If you wish, garnish with fresh basil leaves before serving.

Step 6: Serve and Enjoy

  • Pour Ike's Godfather Sauce over your favorite pasta, use it as a dipping sauce or smother it on grilled meats. Enjoy the rich, savory flavors that make this sauce extraordinary.

Notes

To maintain the rich flavors and quality of Ike's Godfather Sauce, it's important to follow proper storage tips. Refrigerate the sauce in an airtight container for up to 5 days. For longer storage, freeze it in a suitable container or freezer bag for up to 3 months. Additionally, dividing the sauce into smaller portions before freezing will make it easier to thaw and use only the amount you need.
