Equipment

  • 8x8-inch baking dish (or 9x9)
  • Large mixing bowl
  • Whisk or wooden spoon
  • Measuring cups and spoons
  • Oven Mitts
  • Spatula (for serving)

Ingredients

  • Jiffy Corn Muffin Mix 1 box, 8.5 oz: Adds sweetness and structure.
  • Cream cheese 8 oz, softened: Brings creamy richness.
  • Whole kernel corn 15 oz can, drained: For texture and sweetness.
  • Creamed corn 15 oz can: Enhances moisture and corn flavor.
  • Eggs 2 large: Bind the casserole together.
  • Butter ½ cup, melted: Adds depth and keeps it moist.
  • Sour cream ½ cup: For a slight tang and smoothness.
  • Sugar 2 tbsp, optional: Boosts sweetness if desired.
  • Salt ½ tsp: Balances the flavors.
  • Black pepper ¼ tsp: Adds a subtle kick.

Instructions

Step 1: Prepare the Baking Dish

  • Grease your 8x8-inch baking dish with butter or cooking spray. This ensures easy serving later. Set it aside while you mix the ingredients.

Step 2: Combine Wet Ingredients

  • In a large bowl, whisk the softened cream cheese until smooth. Add melted butter, eggs, and sour cream. Mix until creamy and well-blended.

Step 3: Add Corn and Seasonings

  • Stir in the drained whole kernel corn and creamed corn. Add salt, pepper, and sugar (if using). Mix until everything is evenly combined.

Step 4: Incorporate Jiffy Mix

  • Pour the Jiffy corn muffin mix into the bowl. Stir gently until just combined. Avoid overmixing to keep the texture light.

Step 5: Pour into Baking Dish

  • Transfer the batter to the greased baking dish. Spread it evenly with a spatula. The batter will be thick but pourable.

Step 6: Bake the Casserole

  • Place the dish in the preheated oven. Bake for 40–45 minutes until golden and set. The center should be slightly firm, not jiggly.

Step 7: Cool and Serve

  • Let the casserole cool for 5–10 minutes before serving. This helps it hold its shape when scooped. Serve warm for the best flavor.

Notes

Ensure the cream cheese is softened for smooth mixing, and drain the canned corn to avoid a soggy casserole. Don’t overmix the batter to keep the texture light. Adjust sugar to taste, as the Jiffy mix is naturally sweet.
