Ingredients
  

  • 2 cups Kodiak Cakes Power Cakes mix
  • 1 cup plain Greek yogurt
  • 1/2 cup milk of your choice dairy or plant-based
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen berries optional
  • 1/2 cup chopped nuts or chocolate chips optional

Instructions
 

Step 1: Preheat the Oven

  • Start by preheating your oven to 350°F (175°C). This ensures your muffins will bake evenly.

Step 2: Prepare the Muffin Tin

  • Line a muffin tin with paper muffin liners or spray with non-stick cooking spray. This will make it easy to remove the muffins once they are baked.

Step 3: Mix Dry Ingredients

  • In a large mixing bowl, combine 2 cups of Kodiak Cakes Power Cakes mix. Make sure there are no lumps.

Step 4: Combine Wet Ingredients

  • In another bowl, whisk together 1 cup of plain Greek yogurt, 1/2 cup of milk, 1/4 cup of honey or maple syrup, 2 large eggs, and 1 teaspoon of vanilla extract until smooth.

Step 5: Mix Together

  • After combining, slowly add the wet ingredients to the dry ingredients. Stir until the mixture is well combined and smooth. Be careful not to overmix the batter.

Step 6: Add Extras

  • If you like, fold in 1 cup of fresh or frozen berries and/or 1/2 cup of chopped nuts or chocolate chips. This step is optional but adds extra flavor and texture to your muffins.

Step 7: Fill the Muffin Tin

  • Divide the batter evenly among the muffin tins, filling each cup about 2/3 full. This allows room for the muffins to rise as they bake.

Step 8: Bake

  • Place the muffins in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Every oven bakes differently, so keep an eye on them.

Notes

If you want to extend the shelf life even further, freeze muffins in a single layer on a baking sheet. After they are frozen, put them in a freezer-safe bag or container. You can keep them in the freezer for up to 3 months. And before eating microwave it for a few seconds.
