Ingredients
  

  • 1 cup Kodiak Cakes Power Cakes Flapjack and Waffle Mix
  • 1/2 cup pumpkin puree
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 large egg
  • 3/4 cup milk or water
  • 1 teaspoon vanilla extract

Instructions
 

Step 1: Mix the Dry Ingredients

  • In a mixing bowl, combine 1 cup of Kodiak Cakes Power Cakes Flapjack and Waffle Mix with 1 tablespoon of brown sugar. Sprinkle in 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of ground cloves. Use a whisk to mix all the dry ingredients well.

Step 2: Add the Wet Ingredients

  • In a separate bowl, beat one large egg, then add half a cup of pumpkin puree to the egg and mix well. Pour in three-quarters of a cup of milk (or water, if you prefer) into the pumpkin mixture. Add one teaspoon of vanilla extract and stir until well combined.

Step 3: Combine Wet and Dry Mixtures

  • Gradually pour the wet mixture into the bowl with the dry ingredients. Using a whisk, mix until just combined, being careful not to overmix. It's perfectly fine if there are a few lumps.

Step 4: Preheat Your Skillet

  • Place a non-stick skillet or griddle on the stove and set it to medium heat. Allow it to heat up for a few minutes until a drop of water sizzles and evaporates quickly.

Step 5: Cook the Pancakes

  • Use a ladle or measuring cup to pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip carefully with a spatula and cook for another 2-3 minutes, until both sides are golden brown. Enjoy!

Notes

If you have leftover batter, cover it and store it in the fridge for up to two days. When ready to use, give it a quick stir before making your pancakes. Cooked pancakes can also be stored in an airtight container in the fridge for 2-3 days or frozen for up to 3 months. To reheat, just place them in the toaster or microwave until they’re warm.
