Equipment

  • Small bowl or mason jar
  • Whisk or Fork
  • Measuring cups and spoons
  • Knife (for mincing garlic and chopping parsley)

Ingredients

  • Extra Virgin Olive Oil: ½ cup this is the base of the dressing.
  • Fresh Lemon Juice: ¼ cup for that zesty kick.
  • Garlic: 2 cloves minced (adds a bold flavor).
  • Dried Oregano: 1 teaspoon a Mediterranean must-have.
  • Honey: 1 teaspoon optional, for a touch of sweetness.
  • Salt: ½ teaspoon to enhance all the flavors.
  • Black Pepper: ¼ teaspoon for a little spice.
  • Fresh Parsley: 1 tablespoon chopped (optional, for freshness).

Instructions

Step 1: Prep the Ingredients

  • Gather all your ingredients on the counter. Mince the garlic and chop the parsley if you’re using it. Freshly squeezed lemon juice is best, so grab a lemon and juice it now.

Step 2: Combine the Base

  • Pour the olive oil and lemon juice into a small bowl or jar. Stir them together with a whisk or fork. This mix sets the foundation for the dressing.

Step 3: Add the Flavor

  • Toss in the minced garlic, oregano, salt, and pepper. If you’re using honey, add it now too. Stir or shake until everything blends well.

Step 4: Mix It Up

  • Whisk the mixture for about 30 seconds until it looks smooth. If you’re using a jar, seal it and shake vigorously for 20 seconds. The dressing should thicken slightly.

Step 5: Taste and Adjust

  • Dip a spoon in and taste your dressing. Add more salt, lemon, or honey if needed. Make it your own by tweaking the flavors.

Step 6: Add Fresh Herbs

  • Stir in the chopped parsley if you’re using it. This gives the dressing a pop of color and freshness. Give it one final mix.

Step 7: Serve or Store

  • Use the dressing right away or pour it into a jar for later. It’ll keep in the fridge for up to a week. Shake it before each use to blend the flavors.

Notes

This recipe is super easy, but use fresh lemon juice and garlic for the best flavor. Shake it well before serving if stored, as the oil may separate. Adjust salt and honey to your taste for a personal touch.
