  • 5 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter melted

Step 1: Prepare the Brioche

  • Cut the brioche bread into 1-inch cubes. If it’s fresh, let it sit out for a few hours to dry slightly. This helps it soak up the custard better.

Step 2: Make the Custard

  • In a large bowl, whisk together eggs, milk, cream, and sugar. Add vanilla, cinnamon, nutmeg, and salt. Mix until smooth and fully combined.

Step 3: Assemble the Casserole

  • Place the bread cubes evenly in the greased baking dish. Pour the custard over the bread, pressing down gently. Make sure all pieces are coated.

Step 4: Chill Overnight

  • Cover the dish with plastic wrap and refrigerate overnight. Let it sit for at least 8 hours to let the flavors meld. This step is key for the best texture.

Step 5: Preheat the Oven

  • In the morning, preheat your oven to 350°F (175°C). Remove the casserole from the fridge while the oven heats up.
