Equipment

  • Large pot
  • Colander
  • Medium Saucepan
  • Whisk
  • 9x13-inch baking dish
  • Mixing bowls
  • Measuring cups and spoons
  • Cheese grater

Ingredients

  • Elbow macaroni 1 pound: The classic shape holds the cheese sauce perfectly.
  • Cheddar cheese 4 cups, shredded: Sharp cheddar gives bold flavor; shred it fresh for best results.
  • Butter ½ cup: Adds richness and helps create the creamy sauce.
  • All-purpose flour ¼ cup: Thickens the cheese sauce for that smooth texture.
  • Milk 3 cups: Whole milk makes the sauce extra creamy.
  • Sour cream ½ cup: Paula’s secret for a tangy, luscious twist.
  • Eggs 2, large: Bind the casserole for a custardy texture.
  • Salt 1 teaspoon: Enhances all the flavors.
  • Black pepper ½ teaspoon: Adds a subtle kick.
  • Paprika ½ teaspoon, optional: For a smoky hint and pretty color.
  • Breadcrumbs ½ cup, optional: For a crunchy topping.

Instructions

Step 1: Preheat the Oven

  • Set your oven to 350°F (175°C). Grease your 9x13-inch baking dish with butter or cooking spray.
  • This ensures the mac and cheese won’t stick. It also adds a touch of extra flavor.

Step 2: Cook the Macaroni

  • Boil a large pot of salted water. Add the elbow macaroni and cook until al dente, about 7-8 minutes.
  • Drain the pasta in a colander. Set it aside while you prepare the sauce.

Step 3: Make the Cheese Sauce

  • Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.
  • Slowly pour in the milk, whisking constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.

Step 4: Add Cheese and Seasonings

  • Remove the saucepan from heat. Stir in 3 cups of shredded cheddar, sour cream, salt, pepper, and paprika until smooth.
  • The cheese should melt completely. Taste and adjust seasonings if needed.

Step 5: Mix in the Eggs

  • Beat the eggs in a small bowl. Stir them into the cheese sauce until fully combined.
  • The eggs give the dish a creamy, custard-like texture. Make sure the sauce isn’t too hot to avoid scrambling.

Step 6: Combine Pasta and Sauce

  • Place the cooked macaroni in a large mixing bowl. Pour the cheese sauce over it and stir to coat evenly.
  • Ensure every noodle is covered. This is the heart of the dish!

Step 7: Assemble the Casserole

  • Pour the macaroni mixture into the greased baking dish. Spread it out evenly with a spatula.
  • Sprinkle the remaining 1 cup of cheddar cheese on top. Add breadcrumbs if you want extra crunch.

Step 8: Bake to Perfection

  • Bake in the preheated oven for 30-35 minutes. The top should be golden and bubbly.
  • Let it cool for 5-10 minutes before serving. This helps the casserole set.

Notes

Use freshly grated cheese for a smooth sauce, and don’t overcook the pasta to avoid a mushy texture. Whisk the sauce constantly to prevent lumps. This rich dish is best enjoyed fresh but reheats well with a splash of milk.
