Ingredients

  • Kielbasa 12 oz: Thinly sliced.
  • Potatoes 4 medium: Peeled, diced.
  • Onion 1 large: Finely chopped.
  • Garlic 2 cloves: Minced.
  • Butter 2 tbsp: For sautéing.
  • Chicken Broth 4 cups: Soup base.
  • Heavy Cream 1 cup: For creaminess.
  • Flour 2 tbsp: To thicken.
  • Salt & Pepper: To taste.
  • Parsley: Optional garnish.

Optional add-ins:

  • Carrots or Celery to boost flavor and texture
  • Shredded Cheddar to sprinkle on top
  • Crumbled Bacon because why not?

Instructions

Step 1: Get Your Ingredients Ready

  • Slice the kielbasa into thin rounds. Peel and dice the potatoes into small pieces. Chop the onion and garlic, and if you’re using fresh parsley, chop that too. Having everything ready will make cooking easier.

Step 2: Cook the Kielbasa

  • Heat a large pot over medium heat. Add the kielbasa slices and cook until they’re golden and slightly crispy. Remove from the pot and set aside, leaving the drippings in the pot.

Step 3: Cook the Onion and Garlic

  • In the same pot, add the chopped onions and cook until soft. Stir in the garlic and cook for another minute or two until fragrant.

Step 4: Add Potatoes and Broth

  • Toss the diced potatoes into the pot and stir them with the onion and garlic. Pour in enough broth (chicken, veggie, or beef) to cover the potatoes. Bring to a boil, then lower the heat and simmer until the potatoes are tender, about 15-20 minutes.

Step 5: Make It Creamy

  • In a small bowl, mix cream and flour until smooth. Slowly pour this into the soup while stirring. Let it simmer for 5-7 minutes until the soup thickens.

Step 6: Add the Kielbasa Back

  • Stir the cooked kielbasa back into the pot. Let the soup simmer for another 5 minutes to mix all the flavors.

Step 7: Finish and Serve

  • Taste the soup and add salt, pepper, or any other seasoning you like. Garnish with parsley or cheese if you want, then serve it up with some crusty bread. Enjoy!

Notes

To ensure the best flavor, use high-quality kielbasa and fresh ingredients. Adjust seasonings to your taste and don’t forget—mashing some of the potatoes helps achieve that creamy, comforting texture everyone loves. This is a soup meant for enjoyment, so take your time and make it your own.
