Equipment

  • A 9-inch springform pan
  • Mixing bowls
  • A food processor (for crushing cookies)
  • Rubber or offset spatula
  • Saucepan (for ganache)
  • Freezer space large enough to hold the pan

Ingredients

For the Crust:

  • 2 cups chocolate cookie crumbs like Oreos
  • 1/2 cup melted butter

For the Filling:

  • 1 ½ quarts of coffee ice cream softened
  • 1 quart of chocolate ice cream softened

For the Ganache Topping:

  • 1 ½ cups semi-sweet chocolate chips
  • 3/4 cup heavy cream

For Garnishing:

  • Whipped cream
  • Chocolate shavings or sprinkles
  • Crushed nuts or cookie crumbs optional

Instructions

Step 1: Prepare Your Ingredients

  • Get everything you need for your Mile High Mud Pie. This may include chocolate cookies, melted butter, coffee ice cream, fudge sauce, whipped cream, and any additional toppings or garnishes you desire.

Step 2: Crush the Cookies

  • Using a food processor, crush the chocolate cookies until they form fine crumbs. Alternatively, you can also place the cookies in a resealable plastic bag and crush them with a rolling pin.

Step 3: Create the Crust

  • In a mixing bowl, combine the crushed cookies with melted butter. Mix it until the crumbs are evenly coated. Press this mixture firmly into the bottom and sides of a 9-inch springform pan to form the crust.

Step 4: Layer the Ice Cream and Fudge

  • Allow the coffee ice cream to soften slightly, then spread it evenly over the cookie crust in the pan. Next, pour fudge sauce over the ice cream to make a tasty chocolate swirl.

Step 5: Freeze and Set

  • Place the assembled Mile High Mud Pie in the freezer and let it freeze for at least 6 hours or overnight. This will allow the ice cream to firm up and the flavors to meld together.

Step 6: Serve and Enjoy

  • When you’re ready to serve, take the Mile High Mud Pie out of the freezer and remove it from the pan. Use a spatula to smooth the edges and place it on a serving plate.

Notes

If you want to make the Mile-High Mud Pie gluten-free, use gluten-free graham crackers or cookies for the crust. For a vegan version, pick dairy-free ice cream and use melted coconut oil instead of butter. This dessert is tasty and easy to adjust for different diets, so everyone can enjoy it!
