Instructions
 

Step 1: Prepare the Squash and Onions

  • Start by heating your oven to 350°F. In a big pan on medium heat, cook the sliced yellow squash and chopped onions until they are soft and see-through. This takes about 10 minutes. Mix now and then to cook evenly. When done, take off the heat and set aside.

Step 2: Create the Creamy Mixture

  • In a mixing bowl, combine the lightly beaten eggs, sour cream, can of cream of mushroom soup, and shredded cheddar cheese. Mix these ingredients together until they form a smooth and creamy mixture. You can use a whisk or a spoon for mixing.

Step 3: Combine and Season

  • Add your cooked squash and onions to the creamy mix in the bowl. Stir everything together gently until it is all well mixed. Then, add salt and pepper to taste. You can also add spices like paprika or garlic powder for more flavor.

Step 4: Prepare the Topping

  • In another small bowl, mix the crushed Ritz crackers with the melted butter. Stir until the crackers are well covered with butter. This will be the crunchy topping for your casserole.

Step 5: Assemble and Bake
